Smoking a whole brisket will leave you with leftovers, unless you are feeding a crowd. I can hear the barbecue fanatics now… Leftovers? My brisket is so good there’s never any leftovers. To that I say, ok so you are eating the rest of a 17 lb brisket yourself?
Use for Leftover Brisket
Using brisket leftovers as sandwiches for the weeks lunches is great but why not make a hot grilled sandwich too? I picked up some fresh baked demi baguettes from a local bakery and cooked all of this recipe on the cast iron plate on my Kamado Joe.
I think getting the coals took longer than cooking the ingredients for the sandwich. But hey, sometimes it is worth the effort!
Ya Gotta Have the Spice!
I came across a loaf of Tillamook Habanero Pepper Jack and picked it up to try. The heat of the habanero creeps up on you when you eat the cheese by itself but in the sandwich it was mellowed out blended with the other ingredients of the sandwich.
Grain Mustard for Some Added Kick
I used a grain mustard aioli for the spread but if I was to do this again I would probably use some hot sauce to spike up some bbq sauce instead. The grain mustard aioli was good but eating it made me wonder how it would be with a hot bbq sauce.
However you want to assemble the sandwich go for it. If you can get your hands on some fresh baked bread, it is a must. Try a local farmers market for some local and fresh ingredients.
